One symbol is a bag with winds coming out of it. Since Aeolus was the god of the winds, he would often give out a bag containing all four winds as gifts.
Another sign is a harp because Aeolus is know to have "airy flying fingers" and his "touch beyond any mortal's." He played sounds of deep delight. This is where the Aeolian harp got it's name. Any harp can become an Aeolian harp if suspended in open air. James Thomson wrote the "Ode to Aeolus' Harp"

Aeolus was the keeper of winds the god zeus had given him the power to still and arouse the wind when the greek hero odysseus visited aeolus he was welcomed as an honored guest as a gift aeolus gave him a favoring wind and a leather bag filled with all the winds

Through a bit of research (I love the Greek and Roman gods) I found there to be two main symbold for this god, one is of a man apparently floating along the clouds with one hand lowered as if tracing patterns upon the clouds that carry him.
The other less complicated is a picture of a bag with wind escaping, representing the gift that was give to Odysseus and wasted by his crew.
