As with so many Jewish rules, this is practicality disguised as religion. A Torah is hand-inked on lambskin, hence very expensive, and very easily damaged by skin oils and acids. If you touch a Torah with your bare hands rather than a pointer, you will not be struck down by Yahweh, but you may very well be in great danger of being struck down by the owner of the Torah!
